Hello everyone, I hope you’re having an amazing Saturday. Today, we went grocery shopping following a meal plan. It felt great; I fell off the meal planning bandwagon a couple of weeks ago and it took a while to get back on a track. This isn’t 100% low carb or 100% homemade…or paleo, or keto, or vegan. It’s what works for us right now in this season. We try to eat as homemade and as healthy as possible but also not stress out too much if we decide to get take-out twice a month; or like it happened two weeks ago, three times in a week.
The following menu plan is for dinners only. Breakfasts we do the basics: oatmeal, eggs, toast, sandwiches or cereal. Since it’s still just the two of us, for lunch we do either leftovers or greens with a veggie burger (you’ll see that we got a box of Dr. Prager’s from Costco in the haul video) or bean salad.
Most of these recipes we follow completely, but some I work with what I have and try to make them lighter by using non-fat Greek yogurt in place of heavy cream, sour cream, mayonnaise, etc or using light butter.
Sunday: Alice Spring Chicken (Outback Steakhouse copycat recipe) with roasted fingerling potatoes and asparagus.
Monday: French Onion Soup with baguette
Tuesday: Crockpot Roasted Tomato Salsa Chicken with salad
Wednesday: Tomato-Basil Soup with grilled cheese sandwhiches
Thursday: Baked chicken with Garlic Sweet Potato Mash
Friday: Carrot Ginger soup
Saturday: NYC Day trip (dinner out)
Sunday: Spaghetti with homemade Marinara sauce (I add extra fresh basil).
Monday: Quinoa Bowls (Quinoa, paprika roasted chickpeas, cucumber, tomato, cilantro, lemon)
Tuesday: Cuban Style black beans over rice and oven-baked sweet plantains
Wednesday: BBQ Chicken Salad
Thursday: Trader Joe’s Orange Chicken with Vegetable Fried Rice
Friday: Leftovers / Breakfast for dinner
Saturday: Chicken and Asparagus Lemon Stir-Fry w/ Cilantro Lime Rice
Sunday: Food shopping again!
I know you see a lot of links from Skinnytaste, I’ve been a longtime fan of Gina’s blog and cookbooks and I swear by all of her recipes. They are healthy, fresh and full of flavor.
